Meatless Recipes

Since going vegetarian, I've experimented with lots of recipes and have decided to include my favorites. Just click on the recipe name and it should take you to the recipe (if it doesn't, let me know and I'll try to repair it.).  To return to this website, just hit your "go back one-page" arrow or button.


So, if you're thinking of going meatless on Mondays or are just looking for something different, maybe this will help.
If you have a favorite vegetarian recipe that you don't mind sharing, please let me know.  I'd love to try it and include it.


Bread
  • Jim ‘N Nick’s Cheese Biscuits   An attempt at the restaurant recipe.  I use 1c flour and 1/2c cornmeal rather than 1-1/2c flour.  It also seems too sweet so I keep cutting back on the sugar. 
  • Southern Cornbread     Real cornbread in this neck of the woods is NOT sweet.  This is the way I've always had it and liked it.  Use buttermilk whenever possible and add 1/4 tsp of baking soda.

  • Eastern European Red Lentil Soup    Very tasty, especially with yogurt.
  • Cauliflower& Red Lentil Curry     Add chickpeas to give it a little more substance.
  • Crockpot Pinto Beans     This is not the recipe I grew up with!  It's much more flavorful, with onions, peppers, cumin, etc.  Great with cornbread recipe above.
  • Donna's Favorite Soup (Masala Lentils) - this is a combination of two recipes and can be done two ways, with or without coconut milk and kale.
  • Mexican Lentil Soup    Put it on and forget it.  Spicy it up the way you like it......and garnish it with sour cream.
  • Moroccan Sweet Potato Stew      I add paprika, red pepper, and turmeric.
  • Mushroom & Black Bean Tortilla Soup - topped with avocado, cheese, and tortilla strips. Make more tortilla chips! I bake mine rather than frying them This is yummy, compliments of Pilar.
  • Roasted Poblano Corn Chowder   This is very tasty. It seems labor-intensive but it really isn't. Well worth the time.
  • Sweet N Sour Chickpea Stew  This has lots of healthy ingredients and is tasty and filling. I tried to find a copy online but was not successful, but at least you can see Sandi's (contributor) comments. My addition was to initially reduce the molasses and vinegar. I started with 1/4 c. of each and increased slowly to taste. The full amount was strong for my taste.
